Herring Sushi with hot Olive Oil - 4p

Ingredients

3 herring fillets
Coarse salt
1 tbsp olive oil
1 tbsp soy sauce
1 garlic clove
1 medium hot chili pepper
1 piece fresh ginger
Shredded Fukaya leek

Salt the fillets lightly on both sides and refrigerate them for 3-4 hours.

Peel and slice the garlic fine, slice the ginger into thin strips.

Finely slice the chilli pepper, no seeds)

Take out the herring and dry pad it with some paper towel.

Cut it into even squares and arrange it on a deep plate or dish.Garnish with the garlic, ginger, chilli and leek.

Heat up the olive oil, add the soy sauce and drizzle it over everything before serving.
