Crab Cakes with Tartar Sauce and Lemon - 4p

Ingredients

500 gr brown crab meat
1 Cup crushed Ritz crackers (about 25p)
½ Cup Mayonnaise
¼ Cup chopped fresh parsley (plus a bit more for garnish)
1 tbs chopped fresh dill (plus a bit more for garnish)
1 tsp lemon zest
½ tsp paprika
Salt and pepper
Lemon wedges and tartar sauce for serving

Combine crabmeat and crackers in a bowl.

Stir together the mayonnaise, parsley, dill. Lemon zest and paprika and pour it over the crabmeat and crackers.

Mix and divide into 8 patties – refrigerate these for about half an hour.

Heat up the olive oil in fry pan to M heat. Fry the patties 2-3 minutes on each side until golden brown and cooked through.

Remove and sprinkle with salt and pepper.

Garnish with the remaining chopped herbs and the lemon wedges.

Serve with a Tartar Sauce.
